Pumpkin Brownies

This is positively the perfect time of year for pumpkin brownies!


1/3 cup butter, softened
1 cup sugar
1 large egg
½ cup pumpkin puree

¾ cup flour
1 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon nutmeg
¼ teaspoon salt

Preheat oven to 350 degrees. Grease 8×8 baking pan. Cream butter and sugar with hand mixer. Add egg and pumpkin puree. In a separate bowl, blend the remaining ingredients. Using hand blender to mix, gradually add the dry ingredients to the wet. Spread into baking pan and bake for 35-40 minutes, or until the cake tester of your choice comes out clean. Allow to thoroughly cool before cutting. Dust with confectioner’s sugar or add a dollop of whipped cream if you choose (blended with some cinnamon or pumpkin pie spice). I typically get 12 bars out of a 8″ × 8″ pan.
