Spicy Pesto Chicken and Pasta

We are such fans of holding intimate dinner parties, and one of our first “go to” meals is this Spicy Pesto Chicken and Pasta.  It’s simple and elegant, and your guests will love it.

With few ingredients and simple instructions, you’ll be able to throw this together in no time.



16-ounces penne pasta

3 Tablespoons extra virgin olive oil

1 Tablespoon chili paste

1 pound boneless skinless chicken breast, sliced

6 Tablespoons basil pesto

1/2 grated parmesan cheese

1/2 cups chopped cilantro

Extra shaved parmesan cheese for garnish


Bring a large pot of lightly salted water to a boil.

Place penne pasta in the pot; cook for 8-10 minutes.

Heat the olive oil in a large frying pan over medium heat.  Mix in the chili paste and chicken.  Cook 10 minutes, or until evenly brown and juices run clear.

Toss the cooked pasta, pesto, parmesan cheese and cilantro into the skillet and continue cooking just until heated through.

Plate dish and garnish with shaved parmesan.
